1. In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar and cook for 2-3 minutes until bubbly and caramelized.
2. Gradually whisk in the milk and cream, stirring until the sugar dissolves. Bring the mixture to a simmer.
3. In a small bowl, whisk the egg yolks and cornstarch together. Slowly pour in a small amount of the hot milk mixture, whisking constantly to temper the eggs.
4. Return the tempered mixture to the saucepan and cook for 2-3 minutes, stirring until the pudding thickens.
5. Remove from heat, stir in vanilla extract and a pinch of salt. Pour the pudding into serving dishes and chill for at least 1 hour before serving.
