1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt.
3. In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract.
4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, until fully combined.
5. Divide the batter between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cakes cool completely before assembling.
6. To assemble, place one cake layer on a serving plate. Spread whipped cream over the top, followed by a layer of cherry pie filling. Repeat with the second cake layer. Frost the top and sides with whipped cream, and garnish with chocolate shavings and additional cherries. Serve chilled.
