1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
3. In a separate bowl, cream the butter and brown sugar together until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract and mashed bananas.
4. Gradually add the flour mixture, stirring until just combined. Fold in the walnuts if using.
5. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
6. Let the banana bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
